Culinary artists like Cosmo have taken the very best of the regional Italian specialities and presented them with a simplicity that produces a magical synthesis. Combine this with an old-fashioned dedication to making eating out an occasion, and you have the classic Scoto-Italian restaurant.

Alas, the fashion for multicultural fusion food and casual dining has destroyed the market for the traditional posh Italian restaurant. In Edinburgh the heyday of the original Cosmo's (which he sold in 1993), or the wonderful Raffaelli's in the West End, has long gone.

The new Osteria does not try to mimic the plush, velvet décor of the old Cosmo's but nor is it casual. It is a smart, democratic trattoria of 30 covers, with the emphasis on classic recipes, food of the day (especially fish), and friendly service.


Osteria may not suit the young and trendy, nor all pockets. But it is a little gem of old-fashioned Italian perfection. It should be cherished.

Classic Italian dishes are what the Osteria Italian Restaurant is all about. There is very little on the menu that wasn't there when Cosmo Tamburro kneaded his first pasta dough. There are steaks, chicken and veal choices with speciality fish options to catch the eye.


The main courses are proof that cooking doesn't need to be complex to be mouth-watering. An expertly cooked piece of cod, it yielded chunky flakes of white meat flavoured with a snappy pesto grassy olive oil. The same degree of care goes into desserts. Wobbly pannacotta which comes with a thick, rich chocolate ice cream. The gentle milkiness of pannacotta is a great foil to the dark chocolate. The coffee-flavoured creme brulee is smooth in texture but with slight bitterness of coffee to give it a pleasant edge.
